Tikka poutine is Canadian comfort food with an Indian twist, and it's easier to make at home than you'd think. This version uses chicken or paneer tikka, hot gravy, cheese curds and tangy pickled onions, inspired by the Creamy Tikka Poutine at P2P Snacks in Abbotsford.
Serves: 2 to 3 | Prep: 20 min plus 30 min marinating | Cook: 30 min
Ingredients
Tikka
- 300 g boneless chicken thigh or paneer, cubed
- 1/2 cup plain yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp each chili powder, garam masala and cumin
- 1/2 tsp turmeric
- Juice of half a lemon, salt, 1 tbsp oil
Poutine
- 500 g fries (frozen oven fries work well)
- 1 cup cheese curds
- 1 cup hot gravy
- Quick-pickled red onion (sliced onion, vinegar, pinch of salt and sugar)
- Chopped cilantro
Method
- Marinate: Mix the yogurt, spices, ginger-garlic paste, lemon juice, salt and oil. Coat the chicken or paneer and rest 30 minutes.
- Cook the tikka: Grill, air-fry or pan-sear on high heat for 8 to 10 minutes until charred at the edges. Chicken should reach 74°C (165°F).
- Bake the fries until crispy.
- Warm the gravy until steaming so it softens the curds.
- Assemble: Pile fries on a plate, scatter curds, add tikka, pour gravy over, then top with pickled onions and cilantro.
Tips
- Serve right away, because poutine goes soggy fast.
- Stir a spoonful of cream into the gravy for extra richness.
- For a vegetarian version, use paneer and vegetable gravy.
